I am loving 2011 with all these new food discoveries – fresh chickpeas, green almonds, and now fresh pistachio…
Fresh pistachios are really wonderful things. They are just so pretty! I have seen their photos before, but their apperance in real life is even more striking. Such color and pattern. Too beautiful to eat perhaps?
Flavourwise the fresh varieties are pretty mild and milky. Peeling the skin and the shell is such an easy task, making the enjoyment even better. Fresh pistachio will make excellent smoothie or nut based milk – if you have access to plenty of them that is.
It must be pistachio season now in Australia since I have come across them in several Middle Eastern grocery stores in the past few weeks. If you happen to see them, don´t hesistate to try. You won´t regret it. I promise.

Never have had (or even seen) fresh pistachios, Anh! Interesting post. My whole family loves to eat the dried and salted and I love using them in recipes.
I love them. Did you find the peeling easy? I think the ones I got last time might have been a bit older, they were painful to peel! Have a good weekend.

love that photo of the stages of the pistachio – we have lots of middle eastern groceries about so I must keep my eye out for them – though I confess we still have roasted pistachios from a recipe a month or two ago – one of those foods I love but don't eat much
This past summer my daughter and I would eat a whole bowl of these! I also used them in cooking a lot!

Gosh, your photos of these colourful pistachios are so striking! Beautiful with the dark blue background to really bring out the hints of pink. You are so talented! There's nothing like fresh pistachios and these ones look fabulous – even like jewels!

We have lots of pistachios growing in Greece and they are wonderful when they are fresh. Also green almonds which you mention, made me very nostalgic as we had an almond tree just behind our house and we loved to eat them fresh with a pinch of salt. I haven't had them for decades as these are not sold fresh unless you have your own almond trees.

I luuurve pistachios but I'm allergic to them…damn it! I am lucky not to be affected by peanuts though which is good considering most food products contain it…

I had fresh almonds but not pistachio and its one of my favorite nuts. Now I want this so bad. The color and pattern is killing me!

It's next to impossible to find fresh pistachios in my country you are so lucky.
