There was an old restaurant that I used to go to to get spicy Szechuan noddles but it has long since gone...thanks for posting this! Now I can make them myself! :) And what do you know...I have a bottle of Szechuan peppercorns just waiting to be used! :) I'm drooling already with your great photos!

It looks stunning and I'm sure tastes even better. Now I have to hunt for Chinese Sesame paste and Sichuan Peppercorns. Szechuan peppercorns are once again available in the US (Penzeys sells them online, as well as many other sources). This is absolutely my favorite kind of recipe -- but then again, I've never met a noodle dish that I did not love!!
